Chocolate Chunk Porn Cookies

Setting the scene: mouth full of cookie dough and air filled with chocolate chip cookies...ACTION: One day back in 2014, I dropped everything I was doing at the time and said "I am going to make some bomb ass cookies..from scratch and right that shiz down because it will change lives". No recipe was followed. Just VIBEB off of what felt and tasted right.



Dry Ingredients:

1 Cup Brown Sugar

1/2 Cup White Sugar

1/2 Tbsp Baking Powder

1/4 Tsp Baking Soda

1/2 Tsp Red Himalayan Salt (LOL...can really use any but I am trying to be #prof)

1 Cup + 1/2 Cup +1/3 Cup Flour (will explain)

1 Cup of Enjoy Life Chocolate Chips (Half Dark Choco and Half Regular)


Wet Ingredients:

2 Ground Flax Seed Eggs (2 Tbsp Ground Flax + 5 Tbsp water...let sit for 1-2 minutes till it becomes gelatinous)

1 Stick or 16 Tbsp of Earth Balance Organic Buttery Spread (Vegan)

1 Tbsp of Vanilla Extract


Directions:


Recipe yields 12 large cookies


Preheat oven to 350 degrees


In a Bowl, combine the two sugars together. Then cream together the "butter" and sugar (I usually prefer the kitchen aide but I also used a hand mixer which worked just fine just not as #prof). Add in one Flax egg at a time to make sure that the mixture becomes unified. Next, add in the vanilla extract.


In a separate bowl, combine the salt, baking powder and baking soda. Then add in 1 cup of flour. Start to incorporate the dry ingredients into the wet ingredients. After it is mixed awesomely, add in another 1/2 cup of flour. Mix well. Then add in your last 1/3 cup of flour.


Why do I incorporate the flour like this: Adding all the dry ingredients at one time can be over powering for your wet ingredients resulting in dry and hard cookies. You want to try and keep the wet ingredients moist so that you result in an moist-ass cookie. (I hate the word moist...I think it is my first time every using it in writing)


Once everything is combined, slowly fold over 1/2 cup of chocolate chips into your dough. Place your other 1/2 cup of chocolate chips in a separate bowl. Taking a Tbsp, grab a hefty spoon full of cookie dough and roll it into large balls. Take the cookie dough and roll it into the bowl full of choco chips #chunkporn.


Place in oven for 25 minutes. If you are like me then you will check on them every 8 minutes. After the time is up, take them out and you have two options: eat hot fresh cookies and potentially burn the rough of your mouth or wait a little bit (team burn the rough of their mouth...STAND UP)
