The Cutest Confetti Sugar Cookies

Do you want Cookies or Cookie Dough? Here is a recipe that can do both.

Ingredients:
1 Cup+1/2 Cup+1/3 Cup of All Purpose Flour
1 1/2 Cups of Sugar
140 ml of Organic Coconut Oil which is about 0.6 of a cup
2/3 Cup of Unsalted Almond Butter (I used the 365 brand from whole foods)
2 Flax Eggs (Combine 2 Tbsp Ground Flax+5 Tbsp Water and let sit till it becomes gelatinous)
1 Tbsp of Vanilla Extract
1/2 Tbsp of Baking Powder
1/4 Tsp of Baking Soda
1/2 Tsp of Sea Salt
Any cute vegan sprinkles that you can find. I used these super cute star confetti sprinkles that I found in Whole Foods baking section.
Directions:
Preheat oven to 350 degrees.
Line a baking sheet with a aluminum foil and spray with coconut oil and/or pam. Set aside.
In a large mixing bowl, cream together coconut oil and sugar. (I literally used one handle piece of the electronic mixer. To all my kitchen tool deprived individuals, any tool can be made for baking). Add in the almond butter, vanilla extract and the flax eggs (try half the mixture at a time)
In a separate bowl combine the baking powder, baking soda and salt. Add in 1 cup of flour. Slowly add the dry ingredients to the wet ingredients and mix well. Then add 1/2 cup of flour. Combine well. At this point, you'll probably say things like this isn't right, this isn't even cookie dough and it is crumbly AF. This was exactly my thoughts. So what could I add to make it more unified?! Almond Butter. Another 1/3 cup of Almond butter was added and sure enough you got a solid cookie dough! Start to add sprinkles to your cookie dough. I only added about 2 hand fulls of sprinkles because I wanted to put a lot of sprinkles on top of the cookie!
This cookie dough can be BAKED or EATEN RAW
Roll cookies into half-dollar (if you do not know what that is...google it) sized balls and press the top of each cookie with an abundant amount of sprinkles. This recipe makes about two-dozen baked cookies.

Place cookies in the oven for about 20-25 minutes. I would definitely suggest eating these babies right out of the oven if you like soft cookies! I ate one immediately and left the rest to cool over night! The next day, the cookies had a crunchy exterior and soft middle! So it really depends on what kind of cookie person you are.

If you are not a cookie person or just plan old lazy, place half the cookie dough in a bowl, combine with sprinkles and dive in to a huge bowl of cookie dough.
