Loaded Cheese Fries

Anything you can eat, we can eat VEGAN. Especially fries, we can eat fries all day everyday. And now we can eat CHEESE fries.

Ingredients for the fries:

1 LARGE Japanese Sweet Potato (If you have not had this type of sweet potato...that needs to change RIGHT NOW because they are my ALL TIME FAVORITE with their purple skin and yellow/white center)

1 Tbsp of Avocado Oil

Seasoning: Garlic, Himalayan Sea salt and HOT cayenne pepper (about a 4:1:1 ratio)

Directions:

Preheat oven to 425 degrees.


Spray coconut oil on a nice baking dish (style points).


Start by cutting the sweet potato in half (the long way). Take one half, with the skin facing you and start cutting the potato into long fries. The length of the fry does not matter but the width will affect the cooking time. Make sure all are about 1 inch thick. Next, coat the fries with avocado oil and distribute evenly. Next, season the fries evenly. Pop them in the oven for 45 minutes, or until golden brown and crispy.

While the fries are in the oven, you can start making the LOADS that make this loaded cheese fries.


Ingredients for vegetables:

1/2 Cup of Purple Cabbage

1/2 Cup of Grape Tomatoes

1 Cup of Sour Kraut

1/2 Tbsp Sriracha

2 Tbsp Low Sodium Soy Sauce


Directions

Using a frying pan, place a 1 inch thick layer of water and turn flame on medium. Place your purple cabbage in and begin to boil. Toss in your WHOLE grape tomatoes (do not cut them because I love when they explode in your mouth). Begin to simmer this mixture. Add in your sriracha and soy sauce. Slowly start to boil off the water, until all the water has evaporated our is now sucked into your veggies. Add in your sour kraut and stir. LOAD done!

Time to make your fries #cheesegoals


Ingredients for the cheese (similar to ricotta):

1/2 Block of Firm Tofu

1/4 Cup of Pecans

1/8 Cup of Nutritional Yeast

3 Pinches of Himalayan Sea Salt


Directions for the cheese:

I will keep this one simple: In a vitamix, blender or food processor, blend together the tofu, pecans and nutritional yeast until clumpy. Try not to blend it too much because then it'll be creamy and you want a more chunky cheese! (usually about 30 seconds) Next add in your salt!

After the fries are golden brown, take them out of the oven. Mix in your LOAD. Add dollops of the cheese.


Place back in the oven for 20 minutes or until the cheese becomes golden brown.


Next step, enjoy all the loaded cheese fries to the face!
